Overview

Hopsteiner Reduced ISO-Extract is a pure, aqueous solution of the potassium salts of reduced (rho) iso-alpha-acids produced entirely from C02 hop extract. Hopsteiner Reduced ISO-Extract will greatly improve the light stability of beer when used as a total hop replacement while preserving the foam and bittering qualities of beer.

Hopsteiner Reduced ISO-Extract provides protection from light-struck flavor only in the absence of normal, iso-acids bittering. Therefore, it is important that no sources of non-reduced iso-acids are introduced into the wort or beer. (Common sources of contamination are equipment surfaces and pitching yeasts that have had previous contact with ISO-acids).

Hopsteiner Reduced ISO-Extract provides 0.6 to 0.8 times the perceived bitterness as compared to the same IBU level from traditional hopping. Consequently, the target level for beer IBU must be proportionally increased to achieve the correct degree of sensory bitterness.

Hopsteiner Reduced ISO-Extract has excellent long-term storage stability. Ambient storage conditions are recommended (15-250C). When stored in sealed containers between 35OF (20C) and 90OF (320C), Hopsteiner Reduced ISO-Extract will maintain its integrity for at least two years.

Hopsteiner Reduced ISO-Extract costs much less to handle, store, and ship than does the brewing equivalent as baled hops. This is a result of its highly concentrated form, long term stability, and ambient storage requirements.
