Content: A new style of beer derived from the US East coast is linked to heavy hop consumptions. These outstanding beer innovations perform their own special flavour and appearance. Studies on these extreme beers are clearly showing the impact on the quality parameters with all risks and facts caused by a heavy dry hopping addition. Influences on beer turbidity, its foam stability, pH, the differences between perceived and analytical bitterness are part of this presentation. In addition, the behaviour and technological background of the so-called hop creep effect is demonstrated with the beers basic analytical data.

Content: Hazy “New England IPA” (NEIPA) is brewed by co-addition of high-protein adjuncts. Little to no hops are added to the kettle during boil, but instead there are multiple hop dosages late in the whirlpool and during active fermentation. This typical NEIPA recipe is resulting in quite unique composition on both hop bitter and aroma compounds as compared to West Coast IPA and other beer styles.

Content: This presentation should help to get the basic knowledge about a usage of hop oils in beer production - the right product in a reasonable dosage at the right time. Lots of brewers are looking for convenient applications to create a late hopping or a dry hopping aroma in beer. In the conventional way, sometimes big loads of hops in form of cone hops or hop pellets are used, followed by heavy beer losses and technological problems. The convenient usage of Hop Oils helps to reduce these problems, with ready to use hop oil products, made for the individual application of the customer.
